Preparation of the ingredients: Peel the ginger and cut into sections of 1/2 cm. Soak in cold water for 1/2 hour.

Change the water and bring to a boil for 5 minutes, change the water and repeat 2 more times (for a total of 3 boils); this somewhat tedious process allows for less pungent ginger.

Cooking Put 300 g of sugar with the ginger and cover with water. Bring to a boil and let it cook until the ginger is slightly translucent. If it is not the case at the end of cooking, add a little more water.

Rest Let the ginger dry and sprinkle it with about 20 g of remaining sugar.

    Candied ginger Excellent, I made it with less syrup because I like it very spicy. I recommend it to enthusiasts. My suggestion: Dry it in the freezer.

    Don't throw away the broths. Put them in a bottle, add 2g of baker's yeast or dry yeast per liter of sugar. Close it and let it ferment for 24 hours. Filter and enjoy your ginger beer!

    Excellent and very easy. Since I love the spiciness of ginger, I skipped the soaking. This candied ginger is delicious as a simple treat or in cakes.

    I encountered the same issue: after 3 hours, still no translucent pieces... The ginger remains firm... Meh...
