Delicious, this cream is perfect for celebrations.
Clean the mushrooms and slice them thinly. Heat the butter in a pan, add the mushrooms, the onion chopped into small pieces, and the garlic. Cook without browning and let the juice reduce, season with salt and pepper.
In the meantime, make a white sauce by placing the butter in a saucepan; when it has melted, add the flour and cook for 2 minutes. Then gradually add the cold milk and the cup of water, and cook until boiling. Add nutmeg, salt, and pepper.
Finally, pour the mushrooms, reserving a little for the final decoration (roast those). Cook for 2 minutes, then blend. Add the cream. Pour into plates and add a few slices of mushrooms and a bit of parsley.
