Celery root soup with toasted nuts, both creamy and very light, is a delight for dinner or as a warm starter.
Toast the nuts in a dry skillet, then coarsely crush them (saving a few for decoration).
Peel and cut the celery root and carrots into small pieces. Sauté the onion and garlic in olive oil for 5 minutes. Add the vegetables. Let cook for a few more minutes. Cover with water and add the bay leaf and nuts. Season with salt and pepper. Let cook for about 30 minutes. Blend everything (long enough to thoroughly puree the nuts).
To finish, serve in bowls and garnish with some toasted walnut halves.
