Celery root soup with toasted nuts, both creamy and very light, is a delight for dinner or as a warm starter.

Ingredients
 100 Peeled nuts
 1 Celeriac
 4 Carrot
 1 Chopped onion
 1 clove Garlic
 1 Bay leaf

Toast the nuts in a dry skillet, then coarsely crush them (saving a few for decoration).

Peel and cut the celery root and carrots into small pieces. Sauté the onion and garlic in olive oil for 5 minutes. Add the vegetables. Let cook for a few more minutes. Cover with water and add the bay leaf and nuts. Season with salt and pepper. Let cook for about 30 minutes. Blend everything (long enough to thoroughly puree the nuts).

To finish, serve in bowls and garnish with some toasted walnut halves.

    Delicious. I made this soup tonight and the whole family enjoyed it. I added a vegetable broth cube and followed the recipe exactly. Definitely worth making again if you love the taste of celery.

    Celery/Nut Soup Really excellent! The combination of ingredients is subtle and unusual... Give it a try! My suggestion: A vegetable broth in the cooking water.

    Good but a little bland This soup is good and original, although a bit bland if made exactly as directed. My suggestion: So, I added a bit of white wine, seasoning, pepper, nutmeg, a bouillon cube, and next time I will use one less carrot.

    Excellent velouté An excellent velouté, the taste of celery is not too strong, the children loved it, nothing needs to be changed in this super good recipe with nuts (surprising in a soup!)

    Well, I didn't understand the usefulness of the 100 g of chopped nuts, nor did I taste it (to provide more softness?) On the other hand, adding them whole at the time of serving brings crunchiness.
