Here is a new recipe for easy zucchini fritters… Just to change things up! These Italian-style fritters, made with grated zucchini and parsley, are cooked in a pan.
Preparation of grated zucchini. Wash the zucchini, grate them without peeling, then salt them and let them drain for 90 minutes in a colander. Squeeze the zucchini well with your hands to extract all the water and place them in a bowl.
Add the ingredients: Add the chopped onion, parsley, eggs, and flour. Season with pepper and mix everything well.
Cooking Zucchini Fritters Heat a pan with about 1 cm of sunflower oil. When the oil is sizzling, place small scoops of batter (1 tablespoon of batter each) into the pan. Cook over medium heat for about 10 minutes, flipping halfway through, until the fritters are golden. Serve the fritters alone, warm or cold.
