Enjoy this squash and chestnut soup. There's nothing better than a good soup to warm you on winter evenings, cozy in your home... I have quite a bit of squash waiting, so I took the opportunity to make this deliciously creamy soup.
Rinse and drain the chestnuts. Peel and cut the squash into cubes. Peel and slice the onion.
Melt the butter in a large pot and sauté the onion for 5 minutes, then add the squash and sauté for another 5 minutes. Add the chestnuts, season with salt and pepper, and pour in the broth. Cover and let cook for 30 minutes.
To finish, blend the soup and serve it hot. You can add a little cream and a small drizzle of hazelnut oil on top when plating.
