Recipe: A bit of Brioche, a bit of Cookie… Chocolate Briokies

Crispy on the outside like a cookie but melting and airy on the inside like a brioche!

Ingredients
 175 Brown sugar
 125 Soft butter
 1 Egg
 190 Flour for brioche with added yeast
 1 pinch Powdered vanilla
 1 pinch Salt
 50 Chocolate chips
 Nutella or peanut butter, caramel spread

Preheat the oven to 140°C, convection heat.

Using your electric mixer, combine the brown sugar and butter. Add the egg and beat the mixture again.

Mix the flour with the chocolate chips, vanilla, and salt. Incorporate it into the butter/sugar/egg mixture in three parts.

As soon as the mixture is smooth, form balls using an ice cream scoop or your hands. Place the balls on a baking sheet lined with parchment paper or a silicone mat. Let them rest for 30 minutes.

Bake for 25 to 30 minutes. As soon as you take them out of the oven, cut out circles using a cookie cutter... You will have nice round and tasty cookies!

To finish, let them cool. You can enjoy them as they are or, for an extra indulgence, spread a small layer of hazelnut spread (or any other spread of your choice) between two cookies!
