Here is the very easy recipe for delicious date-filled pastries. I prepare the dough with fine and medium semolina, and it is perfectly melt-in-your-mouth. These small, honey-soaked treats flavored with orange blossom are essential for Eid’s snack time.

 250 Medium semolina
 250 Liquid honey
 500 Date
 125 Peanut oil

Place the semolina in a bowl with a pinch of salt, pour in the cold oil, and mix, then let it rest for 1 hour.

In the meantime, prepare the dates: remove the pits and cut them into thin slices (or use date paste), add 3 tablespoons of orange blossom water, and a tablespoon of oil to obtain a smooth paste.

Add water to the semolina (about a small glass, gradually) until a workable dough is formed. Take a small ball of dough (about the size of a fist), flatten it by hand on a board until it is 2 cm thick. Work with small amounts of dough to create rectangles of approximately 30 cm by 10 cm.

Place a roll of date paste in the middle and fold the rectangle. You will get a long cylinder. Cut it into small rectangles (or other shapes) and fry in a pan with 5 mm of oil at the bottom, until golden brown on each side.

To finish, heat the honey with 4 tablespoons of orange blossom water.

    Another simpler way I make it simpler by using 3 parts fine semolina and 1 part medium semolina, then I mix. I add 1 part melted butter, mix, and obtain a crumbly dough. I add 1 part water while shaping the dough into a ball, then I add some orange blossom syrup, and we get a dough that we let rest in the refrigerator for two hours. We shape the dough into a log, then create a groove along the log to place the date paste and seal the dough. We fry them and prepare a honey syrup in a saucepan (honey + lemon). We soak the pastries in the syrup and let them cool.

    Variant Good recipe. My suggestion: I use butter, it’s more refined, and I don't deep-fry them, but I bake them at 350°F for 25 minutes. It’s a bit less greasy.

    Baked, they are less fatty. My suggestion: We bake them! It's less fatty, more digestible, and better!

    DATE MAKRUTS Not easy to make, especially when handling the semolina. But it is so good!
