A simple and fun recipe that both kids and adults love! Perfect for a birthday or to please someone!
Preheat the oven to 200°C. Start with the cupcakes: in a bowl, add the yogurt, sugar, vanilla sugar, flour, oil, the 3 eggs, baking powder, and salt in that order. Mix everything together until you obtain a smooth batter.
In your mold, place your liners. Add the prepared batter. Do not fill to the brim, the batter will rise; leave half a centimeter.
Place the cupcakes in the oven for about 20 minutes at 200°C. Check occasionally; the cupcakes are done when the top is lightly colored. Once the cupcakes are out of the oven, let them cool for about ten minutes.
While baking, prepare your royal icing. In a container, whisk together the egg white and powdered sugar until you achieve a smooth, opaque, and fairly sticky paste. If needed, add a few drops of water if the mixture is too thick.
Divide the mixture into several containers according to the colors you want to create. Add the food coloring to each container. A few drops are enough.
Then coat each cupcake with the back of a teaspoon. Be careful, royal icing tends to spread on its own, so it's better not to use too much and wait for it to spread rather than putting on too much and having it overflow.
Add your decorations immediately as the icing hardens quickly.
To finish, let everything rest in the open air for about twenty minutes. And there you have it, your cupcakes are ready to be enjoyed. You can also store them in the refrigerator.
