Coconut blancmange is a very simple and refreshing dessert! One of the chef's favorite recipes.

Ingredients
 400 Coconut milk
 200 unsweetened condensed milk
 100 Sugar
 3 Gelatin
 1 pinch Powdered vanilla
 Grated coconut

Soak the gelatine sheets in a bowl of cold water.

Bring the coconut milk, condensed milk, and powdered sugar to a boil.

Then add the drained gelatin and the powdered vanilla.

Pour into ramekins or small silicone molds. Let cool at room temperature, then refrigerate for at least 4 hours.

Unmold.

To finish, serve with liquid caramel or a fruit sauce (mango, passion fruit, or raspberries). Sprinkle with grated coconut.

    I made this very simple, quick, and delicious recipe. I used less sugar, 80 grams, and I put my purée at the bottom of the ramekins before placing them in the refrigerator. I chose a mango purée.

    I added sweetened condensed milk instead of unsweetened because we found the first time that it was a bit bland in taste; it was lacking sugar. Otherwise, it's a very good recipe.
