The king cake is a traditional dessert enjoyed in January. This version suggests making individual cakes, which are easier to serve and enjoy. The recipe is simple and accessible, even for amateur cooks. It uses classic ingredients like puff pastry, almonds, and rum. The preparation requires a bit of attention to form these little golden crispy wonders, but the result is delicious.

 80 Powdered sugar
 80 Soft butter
 80 Almond powder
 2 Egg
 1 Rum
 1 Vanilla sugar
 1 Egg yolk (for glazing)

Preheat the oven to 180°C. In a mixing bowl, pour in the 2 whole eggs, the sugars, and the softened butter. Work everything into a smooth paste. Add the rum and the almond flour. Mix well.

Using a cookie cutter, cut the dough to your desired size and place 2 discs on parchment paper. Spread the almond mixture on top, leaving a 1 cm border. Place the bean in the center. Brush the empty edge with the beaten egg yolk. Cover with 2 more discs of dough. Press the edges to seal and crimp them diagonally with the tip of a knife.

To finish, score diamonds on the top of the pastry. Brush the pastry with the remaining beaten egg yolk and bake for 20 to 25 minutes.

    Very good and easy! I replaced the vanilla sugar with dark chocolate chips. To brown the top, I used milk instead of an egg: perfect result.

    More rum We put in 2 tablespoons of rum to add more flavor. But for the rest, it's perfect. My suggestion: We also don't add any flour or cornstarch.
