A blueberry almond gratin with a sweet flavor of tonka bean and almonds. I love tonka bean for flavoring pastries. I really enjoy these little gratins, they are so easy to make.

 150 Blueberries
 80 Almond powder
 2 Egg
 2 Sugar
 15 Liquid cream
 20 Slivered almonds
 ½ Tonka bean
 ½ Vanilla extract

Gratin mixture In a mixing bowl, beat the eggs. Add the cream, almond flour, and sugar. Finish with the tonka bean.

Preparation of the gratins Preheat your oven to 230°C on the gratin or grill setting. Grease oven-safe dishes. Arrange the blueberries harmoniously at the bottom of each dish. Pour the almond cream mixture over the blueberries. Sprinkle with flaked almonds. Bake until the top is lightly browned.

Tasting Serve hot or warm accompanied by a sorbet of your choice or not.
