Today I offer you soft honey cookies. The nuts on top add a bit of crunch and a pleasant roasted flavor. These cookies are easy to make, economical, and delicious. Perfect for serving at children's snack time. You can even involve them in the preparation process; they will be delighted.
In a mixing bowl, combine the eggs with the sugar and vanilla sugar using a spatula.
Add the melted and cooled butter and mix again to incorporate it. Then do the same with the honey.
In another bowl, mix the flour and baking powder. Then add them to the liquid ingredients in three batches, first mixing with a spatula and then by hand until you achieve a smooth, sticky dough.
Cover the bowl with plastic wrap and place it in the refrigerator for 90 minutes.
Preheat the oven to 180°C, static heat.
Place the chopped nuts in a bowl.
Take a teaspoon of dough, form a ball the size of a walnut, slightly flatten the ball, then roll it in nuts.
Place on a tray with a silicone mat or parchment paper, spacing them apart.
Bake and cook for about 20 minutes.
To finish, once completely cooled, store the cookies in an airtight metal container.
