Discover my recipe for ladyfingers, a classic of pastry that serves as the base for several desserts or treats. Easy to make, this recipe requires only a few ingredients! You’ll get delicious, soft biscuits, perfect for a charlotte or tiramisu.
Preparation of the egg whites Dust with a little powdered sugar... you now have a lovely cookie appearance! Preheat the oven to 200°C. Let’s start by separating the egg whites and yolks. Set the yolks aside. We will first whip the egg whites. Once they start to be well whipped, gradually add the granulated sugar while continuing to whip the egg whites. You should achieve fairly firm peaks. Well done!
Add the yolks. Gently add the yolks and whisk them for another 5 seconds: 5...4...3...2...1... STOP!!!! It's perfect!
Add the flour. Then add the sifted flour. Gently fold it in with a spatula. Once your mixture is perfectly smooth... it's ready!
Poaching the ladyfingers Pour this mixture into a piping bag. Line your baking sheet with parchment paper and ... here you go, you can start piping your biscuits. Make nice biscuits about 10 cm long.
Cooking: Dust them with sifted powdered sugar... and off to the oven for 8 to 10 minutes at 200°C.
WATCH THEM during cooking. They should only take on a slight color.
Cooling Let them cool and ... ENJOY!
