When I saw this roll, I absolutely wanted to try it and I was right, because it was really good. A lovely starter or appetizer, which can be customized with different fillings according to our preferences. With ham in the original recipe, I used country ham. But you can use regular ham or smoked salmon instead, depending on what you like.
Preheat the oven to 180°C, static heat.
Wash and dry the zucchinis, removing the ends. Grate them using a coarse grater.
In a large bowl, beat the eggs with a fork along with salt, pepper, and cheese.
Add the grated zucchini and mix well.
Pour the mixture into a 30 cm x 24 cm pan and spread it evenly. Mine was silicone; otherwise, remember to line it with parchment paper. Smooth the surface.
Bake and cook for 25-30 minutes or until the surface is lightly golden. Remove from the oven and let cool completely.
Invert onto a parchment paper. Then spread the cheese over the entire surface and place the slices of ham on top.
Roll tightly along its width (the shorter part) and wrap in the parchment paper that was used as a support.
To finish, place in the refrigerator for at least 1 hour before consuming.
