Yakitori are Japanese chicken skewers.

Ingredients
 1 boneless, skinless chicken breast
 125 sake (or clear alcohol)
 185 soy sauce
 125 mirin
 65 diced onions
 2 sugar

Soak the skewers in water for 20 minutes. Cut the chicken into cubes. Preheat the oven to 200ºC (gas mark 7), on the grill setting.

In a saucepan, bring the sake, soy sauce, mirin, and sugar to a boil. Set aside.

To finish, thread the cubes of chicken and onion onto skewers, alternating them. Place the skewers on a slightly deep baking tray and cook for 10-15 minutes, turning and basting them regularly with the sauce. Serve immediately.

    Response about mirin Hello gentlemen, regarding mirin, it is a sweet seasoning sauce. On my bottle, the first ingredient is corn syrup and my mirin is made in the U.S.A. I do not have any sake or rice wine in the listed ingredients. There might be slight differences, but it is definitely a sweet sauce with a bit of vinegar. My suggestion: Season to your taste; you can always add extra sake if you desire. Enjoy your meal!

    Yakitori Hello, olivier. It must be hard to be alone against the rest of the world! Mirin is a rice wine, not a vinegar. According to Wikipedia, online stores that sell Asian products, etc. where everything is explained in detail, including different recipes for making it yourself (provided you have the ingredients... which can be found on those same online stores, of course).

    Very good I use honey instead of sugar, much more tasty.
