This traditional roasted calf's head is very simple to make. Serving it with a gribiche or ravigote sauce is a delight. A classic grandmother's recipe that we love!
Preheat the oven to 180 °C.
Pan cooking: In a pan, heat 10 g of butter and the oil. Sear the meat for 2 minutes on each side and place it in a baking dish. Add the garlic, rosemary, thyme, and bay leaf. Pour water into the bottom of the dish. Season with salt and pepper.
Oven cooking Bake for 1 to 1.5 hours. At halfway through cooking, add the remaining butter. Baste regularly with the cooking juices.
