Peel the garlic cloves and crush them in a mortar until you obtain a paste. First, add the vinegar (1.5 teaspoons). Add the egg yolks, pouring in the olive oil in a steady stream while continually stirring in the same direction. Add salt and pepper. The sauce is ready when your pestle stands upright in the sauce.

Preparation of the side dish: soak the cod to remove the salt. Poach the cod for 20 minutes in simmering water, with the bouquet. Cook the vegetables: 30 minutes for the carrots and potatoes, 10 minutes for the eggs, 20 minutes for the beans.

To finish, presentation of the complete dish: serve the vegetables and the fish on a large platter. Serve the garlic mayonnaise in a separate small dish.

    Not at all the recipe. And to make it more digestible, use 50% sunflower oil. Also, absolutely no cod; it does not have the same flavor at all.
