Quick and easy soup to make. Option to add chili for those who enjoy it.
Thaw the shrimp if they are frozen, then peel them.
In a pot, pour in the vegetable broth, coconut milk, lime juice, lemongrass, red curry paste, shrimp, salt, and pepper.
Stir and cook over medium heat for 10 minutes.
Add the noodles and cook for another 5 minutes.
To finish, remove the lemongrass and serve with chopped cilantro.
