A recipe for stir-fried noodles with beef and toasted sesame oil inspired by Thai cuisine. Photo credit: Anne Bergeron.
Cook the rice noodles al dente (2 minutes less than indicated on the package) and drain them.
In a bowl, mix the sesame oil, chili sauce, fish sauce, and soy sauce.
Cut the meat into strips. Heat a large pan with 1 tablespoon of sesame oil and sauté the meat.
Crack the eggs and stir vigorously with a spatula until everything is cooked.
Pour the noodles and then the bowl of sauce. Sauté for a few minutes.
Pour in the bean sprouts and chopped green onions and mix.
To finish, remove from heat, place the lime wedges, and sprinkle with crushed cashews and chopped mint. Serve immediately.
