Quick and delicious recipe to enjoy squid! I suggest a tomato version that is absolutely amazing; everyone always asks for more!
Peel your potatoes. Cut them into cubes and cook in salted water for about 20 minutes. Drain them, season with salt, and keep warm.
In the meantime, prepare your tomato sauce. Sauté the finely chopped onions and garlic; once they are translucent, add a teaspoon of sugar and let it caramelize. Then add your chopped tomatoes. Let it simmer for at least 25 minutes.
Add your fresh or defrosted squid to the tomato sauce. Season with salt and pepper.
Let simmer for 5 to 10 minutes, the squid cooks very quickly.
To finish, add your chopped parsley (depending on the size of your bunch, but personally I like when there’s quite a bit of parsley).
