As an appetizer or even as toast, we can’t resist these spring toasts with tofu and peas. A seasonal recipe that highlights peas.
Mix the water and the cornstarch.
Peel the garlic cloves, blanch them several times in boiling water for 1 to 2 minutes to remove the bitterness.
Blend the garlic cloves with the soy cream, the silken tofu, and the cornstarch, then heat until just boiling to thicken the mixture.
Season with salt and pepper.
Cook the peas in a pot of salted water.
Cut the radishes into thin slices.
To finish, assemble the tartine by spreading a layer of silken tofu garlic cream, add the peas, a few slices of radish, and finally some sprigs of dill.
