Today I offer you a vegetarian dish or an upgraded side – spaghetti with spinach and peas, accompanied by a creamy pesto-flavored sauce. A delicious pasta dish that is inexpensive, easy, and quick to make. A great way to get picky eaters, especially children, to eat spinach.
Cook the spaghetti al dente according to the package instructions. Drain.
Peel and chop the onion and garlic.
In a large skillet, heat the olive oil over medium heat. Add the onion and sauté for a few minutes, stirring, until it is lightly golden.
Add the garlic and cook for another 30 seconds, stirring.
Add the spinach and peas (no need to thaw them beforehand) and continue cooking for about ten minutes. Stir from time to time.
Add the liquid cream, the pesto, and the Parmesan cheese. Mix well and cook for another 3 minutes to allow the cheese to melt completely. At the end, salt and pepper to taste.
Add the spaghetti and cook, stirring, for 2-3 minutes to heat them thoroughly and coat them in sauce.
To finish, serve immediately.
