 600 Cooked organic shrimp
 800 Amandine Potato
 1 Organic white onion
 2 Lemongrass
 1 Fresh ginger, 5 cm
 2 cloves Organic garlic
 2 Olive oil
 30 Powdered curry
 30 Shredded coconut
 40 Coconut milk
 80 Heavy cream
 Salt
 1 Lime
 1 Granny Smith apple
 1 Espelette pepper
 8 Coriander
 Freshly ground pepper

Peel and slice the onion and garlic. Remove the outer leaves of the lemongrass and cut the stalks into small pieces. Peel the ginger and grate it.

In a large pot, heat the olive oil. Add the onion and garlic and sauté with the lemongrass. Let it brown. Add the curry and shredded coconut and reduce the heat. Sauté the mixture while stirring. Add the coconut milk. Then add the cream to make the sauce. Season with salt and pepper. Let it simmer.

Meanwhile, peel the potatoes. Then cut them into small pieces. They should not be too thick to cook quickly! Strain the sauce: in another pot, place a sieve and pour the sauce into the sieve. Put the pot on the heat, and add the potatoes to the sauce. Let simmer over low heat for at least 20 minutes.

Peel the shrimp. In the pot with the sauce and potatoes, add the shrimp to warm in the sauce. Cut the washed green apple into sticks without peeling it. In the pot, add the lime juice. At the last moment, add the apple slices.

To finish, serve very hot, sprinkled with washed and chopped coriander. ENJOY YOUR MEAL!
