A recipe for shrimp bites.
Peel the shallots and garlic. Peel and grate the ginger. Shell the shrimp. In the bowl of a food processor, place the shrimp, 2 cloves of garlic, and the shallots.
Blend everything for a few seconds. Add the grated ginger, fish sauce, and soy sauce to the mixture. Mix everything well.
Place the rice papers two by two in water and soak them for two minutes. Spread a clean cloth on the work surface, place a rice paper on it, and gently pat it dry.
Place a large teaspoon of the mixture on the lower part of the rice wrapper, add a few bean sprouts and 2 leaves of coriander, roll the wrapper once and fold the edges inward, then fully roll the rice wrapper, tucking in the pointed end.
Repeat the process until all ingredients are used up. Cover everything with a damp paper towel. Peel and grate the carrots and cucumber. In a bowl, pour in the dipping sauce, add the remaining crushed garlic clove using a garlic press, the sugar, and the lemon juice. Pour the sauce over the vegetables, add some cilantro. Mix well.
To finish, cook the bites for 2 minutes in a 1000 W microwave at full power or for 3 minutes in a steamer. On the plates, place some raw vegetables, add the bites, a cilantro leaf, and serve immediately. The bites can be prepared in advance and stored in the refrigerator covered with plastic wrap to prevent the rice wrappers from drying out.
