A salmon recipe.
Cut the avocados into cubes and drizzle with lemon juice. Add a drizzle of olive oil, season with salt, pepper, and crushed pink peppercorns, and set aside.
Slice the radishes into thin rounds and set aside.
In a pan, add a drizzle of olive oil and then toast the sliced almonds. Set aside.
Place a pastry ring on a plate and fill it with diced avocado, pressing down with the back of a spoon to give it an even shape. Gently lift the ring: the avocado mixture should hold its shape perfectly.
Surround this brunoise with a slice of smoked salmon.
To finish, add the mixed salad seasoned with vinaigrette, a few slices of radish, sliced almonds, and some sprigs of dill. Enjoy.
