 4 Olive oil
 1 White balsamic vinegar
 1 Timut Pepper
 1 Lime
 Spring onion
 Flower of salt

Wash the salmon, remove the scales, skin, or remaining bones.

Cut it into small cubes.

In a mixing bowl, whisk together the vinegar, passion fruit juice, and olive oil.

Add the salmon to the bowl and mix it with the dressing.

Add the fleur de sel and crushed Timut pepper.

To finish, place the tartare in small jars and garnish with green onion leaves and a twist of lime zest.
