A very easy recipe to make that will appeal to both children and parents!
Gather the ingredients. Slice the onion and peel the shrimp, devein the shrimp.
In a pan, melt the butter. Sauté the onion, previously sliced into thin strips, over medium heat.
Once the onion becomes translucent and starts to brown, add the shrimp, salt, and lemongrass. Allow the shrimp to brown over medium heat for 5 to 7 minutes, stirring well with a wooden spatula.
Add the crushed tomatoes now, and let simmer for 15 minutes over low heat, stirring regularly.
Add the coconut milk now. Mix well and let simmer for 10 minutes over low heat. Adjust the seasoning at this point. Start cooking the linguine in a large volume of water at this time.
To finish, it's ready! For plating, place the pasta in each shallow bowl and add the coconut shrimp preparation on top. Sprinkle with grated parmesan and serve immediately! Enjoy your meal!
