My tips for cooking this meat to perfection.
Preheat your oven to 220°C. In a hot pan without any fat, place the duck breast skin-side down. Allow the fat to melt and brown over medium heat for 2 minutes.
Then turn the duck breast and continue cooking for 2 minutes.
Place in a baking dish, skin side down, season with salt and pepper on both sides and: Bake for 6 minutes for medium-rare meat. Bake for 8 minutes for medium meat. Bake for 10 minutes for well-done meat.
To finish, let it rest for 5 minutes under a sheet of aluminum foil. Drain on paper towels and slice the meat. Serve with a mushroom sauce.
