Here is a recipe for vegetable spaghetti with two cheeses, perfect for a tasty lunch. This recipe made with long spaghetti, leeks, walnuts, honey, and two types of cheese is very simple and will leave you wanting more.
Cook the spaghetti according to the instructions on the package. Rinse them well under water at the end of cooking.
Wash the leeks and cut them into small pieces about one centimeter long. Sauté them in a skillet with a bit of oil over low heat for 10 minutes. Add the cream, seasoning, and chopped herbs, and continue cooking on low heat for 3 minutes.
In a small pan, toast the nut pieces in honey and set aside.
Grate the cheese and cut the blue cheese into slices.
Add the spaghetti to the skillet and mix with the leeks.
To finish, when the mixture is hot again, add the two cheeses. Serve by placing the caramelized nuts on top.
