 200 Veal breast
 1 Apple cider vinegar
 50 Type 55 flour
 65 Water

For the tartar sauce
 1 Egg
 1 Mustard
 10 Oil
 1 Sweet and sour gherkins
 1 Capers
 3 Onion in vinegar
 1 Shallot
 5 Parsley
 1 Tarragon

Two hours before, rinse the veal and soak it in a bowl of water with vinegar. Let it drain overnight in the refrigerator.

Cook the hard-boiled egg. Peel it and let it cool.

Mix the flour and water. Season with salt and pepper. Place this mixture in the refrigerator.

Prepare the tartar sauce: separate the egg yolk and set aside the white.

Mash the egg yolk and mustard to achieve a creamy mixture. Whip this mixture like a mayonnaise by gradually incorporating the oil.

Peel and chop the shallot with a knife. Cut the egg white, pickle, and onions into small cubes. Chop the capers. Add them to the mayonnaise. Keep the tartar sauce in the refrigerator until serving.

Fry the veal sweetbreads: drain and dry the sweetbreads. Cut them into small pieces of 4 cm. Prepare a plate of breadcrumbs.

Heat the frying oil to 180°C. Dip the pieces of veal in the flour mixture. Then coat the veal in breadcrumbs before frying it in the hot oil. Work in small batches.

Drain the veal strawberry fries on absorbent paper.

To finish, serve the fried veal with tartar sauce.
