Peel and slice the mushrooms, peel and cut the carrots, onion, and garlic into rounds.
In the mixing bowl, place the onion and garlic, blend for 5 seconds at speed 5. Scrape the sides of the bowl with a spatula, then add the olive oil and set for 5 minutes at 100°C at speed 3.
Add the meat, carrots, mushrooms, cloves, water, herbs, season, and set to cook for 1 hour on reverse mode at 100°C on speed 1.
To finish, pour the contents of the bowl into a strainer over a mixing bowl. Pour the resulting sauce back into the bowl, then add the flour, the butter, and set for 10 minutes at 90°C on speed 4. Squeeze the lemon, then adjust the seasoning and serve with rice or potatoes.
