Zucchini, cheese, and thyme are combined in this simple and still summery tart recipe. It is delicious, and this vegetarian dish can be served as a starter or as a main course accompanied by a salad, such as tomatoes.
Preheat the oven to 200°C (400°F). Wash the zucchinis (do not peel them, so if the zucchinis are organic, it's better) and grate them using a coarse grater. Peel the garlic and chop it.
Heat 3 tablespoons of olive oil in a pan, add the zucchini and garlic, a little crumbled thyme, and sauté for 5 minutes while stirring.
Roll out the dough on its parchment paper and place it in a tart pan. Prick it with a fork a few times. Spread the cheese and zucchini over the dough, season generously with salt and pepper, drizzle with a little olive oil, and bake for 25 minutes.
Lower the oven to 180°C after 10 minutes of baking. Serve the tart warm or hot, sprinkled with fresh crumbled thyme. For a stronger flavor, dust the tart with a little grated parmesan.
