For the rub
 2 Paprika
 1 Smoked paprika
 1 Garlic
 1 Salt
 1 Shallot powder
 2 Ground cumin
 1 coriander seeds
 1 white pepper
 1 Espelette pepper
 2 brown sugar
For the marinade
 1 Sesame oil
 1 Olive oil
 3 Honey
 1 Lemon
 2 Ginger
 2 cloves Garlic
 1 Shallot
For the dip sauce
 75 Ricotta
 120 yogurt
 Basil
 Coriander
 Mint
 Tarragon
 Parsley
 1 Lime
 1 white radish
 ½ Cucumber

Mix all the rub ingredients in a mortar. Grind everything finely.

Pour all the marinade ingredients into a measuring cup and blend finely. Marinate the chicken wings overnight. You can marinate them in a plastic bag or a container. Keep refrigerated.

Heat the barbecue using the QuickStart system. Let the chicken wings drain, reserving the marinade. Coat the chicken wings with the rub and place them on the grill.

Baste them with marinade every 10 minutes. Turn them regularly. Close the grill each time. Your wings will be ready after 30 minutes of cooking.

Meanwhile, prepare the dip sauce. Finely chop the fresh herbs. Grate the white radish and cucumber. Mix them with the ricotta, yogurt, lime juice, salt, pepper, and fresh herbs.

To finish, serve the chicken wings with the fresh dipping sauce.
