Discover the recipe for organic lamb epigrams braised in a baker's style. This family recipe is easy to prepare and perfect for a dinner with family or friends. Chef's tip: you can replace the epigrams with second ribs or a boneless organic shoulder.
Preheat the oven to 170° C.
Cut the organic lamb chops into pieces, peel the garlic cloves and cut them in half, slice the tomatoes into thick slices, peel the potatoes and cut them into thin rounds.
Grease a dish or a cast iron pot, season the bottom with salt and pepper, add a bit of thyme and garlic, spread a layer of potatoes and tomatoes, cover it with pieces of organic meat, spread the rest of the potatoes, garlic, thyme, and tomatoes, and finish by adding the remaining meat, season with salt, pour in white wine, add 2 glasses of water, and cook for 2 hours in the oven.
Continue cooking if necessary; the meat and potatoes should be tender under the tip of a knife.
Serve the organic lamb chops hot, directly from the cooking dish.
To finish, Chef's Tip: Prepare the appetizers in advance and reheat them when it’s time to serve.
