Recipe for Sea Bass in Pea Cream

A sea bass dish with pea cream, a very flavorful and refined plate that enhances the land-sea combination.

Ingredients
 1 Onion
 25 Butter
 650 Fresh peas
 50 Vegetable broth
 5 Liquid cream
 1 Lemon zest
 Salt pepper
 Dill or tarragon

Slice the onion and sauté it in half of the butter in a pot. Add the peas, then pour in the vegetable broth. Bring to a boil and let it cook for 20 minutes. Add the cream, lemon zest, salt, and pepper. Blend everything to obtain a smooth preparation. Keep warm.

Cut the sea bass fillets into pieces. Heat the remaining butter in a pan. Add the pieces of fish and cook them for 1 to 2 minutes on each side.

To finish, pour the pea cream into shallow bowls. Add the fish and garnish with a few sprigs of dill or tarragon for me. Enjoy. You can also make this recipe with cod fillet.
