Preparation of the meat Take the rib of beef out of the fridge about half an hour before cooking, to allow the meat to reach room temperature before cooking. Preheat your oven to 90°C fan mode.

Place the ribeye on a cutting board and season generously with pepper. Massage the meat to ensure the pepper adheres well. Do not salt it. You should never salt a piece of raw beef... it causes it to bleed.

Cooking In a pan, pour in a generous tablespoon of neutral oil and heat over high heat. When the pan is smoking, place the meat in and sear all sides of the beef rib and the edges. This will take a few minutes.

Place in a baking dish. Add bay leaf, thyme, 2 cloves of unpeeled garlic, and 2 crushed cloves of garlic. Finish by placing a nice knob of butter on the meat before putting it in the oven! For a 900 g rib of beef, cook for 40 to 45 minutes. As a general rule, allow about 15 minutes of cooking time for every 300 g of rib of beef.

To finish, remove from the oven and cut carefully. Sprinkle with flaky salt. Return to the baking dish and place back in the oven for just 2 or 3 minutes to heat through.

    I often make beef ribs. The recipe is good but too fatty. Next time I'll do everything the same but I'll use butter instead of oil. Next time it's zero oil 100% butter. And it's important to check the weight of the meat in relation to the cooking time. Otherwise, a recipe based on garlic is excellent.

    The little comment stating that you should never salt a piece of raw beef clearly shows the knowledge of the person who wrote the recipe... You can salt a piece of beef before cooking, but it all depends on the cut, thickness, and cooking method. In short, the recipe isn't too bad, but just for this false idea presented as a given, I'm giving it 2 stars ;)
