Today I offer you a complete dish made with rice and squid, along with bell peppers and peas. A family meal that brings back memories of vacations with all those southern flavors present on our plates. It is balanced, light, and delicious, yet remains budget-friendly. A great alternative to a fish dish. The rice is soft, tender, and well-flavored, as all the ingredients cook together, enhancing the mixture of flavors.

 4 Olive oil
 1 Onion
 2 cloves Garlic
 2 Bell pepper
 500 Calamari rings
 250 Rice
 500 Hot water
 250 Tomato sauce
 150 Peas
 1 Paprika
 ½ Turmeric
 ½ Ground chili pepper
 ½ Salt (or to taste)
 ¼ Pepper (or to taste)
 1 Bay leaf
 1 coriander (or parsley)

Prepare all the ingredients. Peel and chop the onion and garlic. Remove the seeds from the peppers and cut them into small pieces. Wash and dry the squid.

Cooking Heat a large skillet with olive oil over medium heat. Add the onion, garlic, and bell peppers, and cook for 3 minutes, stirring regularly. Add the calamari rings and continue cooking for another 5 minutes. Then add the rice and cook for another minute, stirring. Add the hot water, tomato puree, peas, and all other remaining ingredients except the cilantro. Stir, cover, and let simmer for 15 minutes. Stir occasionally to prevent the rice from sticking. Turn off the heat, stir, and let it rest covered for another 10 minutes.

Serve immediately, sprinkled with coriander (or parsley).
