A light recipe for quails cooked in a casserole, where everyone licks their fingers! You can also prepare a cream or mushroom sauce to accompany your poultry cooked in a cast iron pot.

 4 Quail
 1 Onion
 15 White wine
 2 Olive oil
 Salt
 Pepper

Cooking the quails Heat the oil in a pot, then place the quails inside.

Stir often to prevent sticking to the pot. Cut the onion into strips.

Cooking the wine and onions When the quails are nicely browned, set them aside and pour the wine along with the onion slices into the pot.

Stewing Let cook for 5 minutes, then add the quails, season with salt and pepper. Simmer for 15 to 20 minutes.

To finish, serve hot.

    Today, Saturday, July 1, 2017, I made this recipe, adding fresh sliced mushrooms in the middle of the cooking, and towards the end, when serving, a bit of thick cream, then I mixed well in my pot—a delight... accompanied by Brussels sprouts, but next time, as a vegetable, I might use fresh pasta or a purée, or my individual zucchini gratin with ricotta that has a nice effect on my table!

    Famous!!!! I used the recipe AND the comments: I added two small tomatoes (from the garden) and some bacon, as well as a bit of poultry stock. The result is remarkable: one could eat it all... I will definitely make it again, especially since this recipe is very simple to prepare and the cooking time is quite quick.

    a delight After reading several reviews (even those from the complainers) I added some smoked bacon, two small tomatoes. At the end of cooking, a bit of fresh cream, blend.... You could eat it all....

    Quails in white wine Super easy to make, and it's a delicious dish. My suggestion: add some bacon and flambé the quails with a spirit when they are nicely browned.

    Very good Good recipe! My suggestion: I replaced the white wine with sparkling wine, a bit of parsley, a sprig of thyme, and half a squeezed orange.
