For the appetizer, we twist the asparagus with this recipe for puff pastries with white asparagus and buttery orange sauce. Guaranteed success!
Preheat the oven to 180°C.
Trim the base of the asparagus and peel.
Roll out the puff pastry. Cut strips 1 cm wide. Wrap the asparagus from top to bottom with a strip of puff pastry.
In a small bowl, mix one egg yolk and the milk. Brush the puff pastry with the mixture, then bake for about twenty minutes.
Place the remaining egg yolk, the juice and zest of the orange in a bowl. Heat over a double boiler while continuously whisking. Once the mixture thickens, gradually incorporate the butter cut into pieces, continuing to whisk until the sauce is smooth. Season with salt and pepper.
To finish, serve the asparagus hot with the orange sauce.
