Discover this recipe, low in fat even though it's pork! The pork loin baked in the oven is tender and fairly quick to prepare aside from the cooking time. It's easy to make and the sauce is really flavorful.
Cooking the pork loin In a Dutch oven, brown the loin with a bit of olive oil and margarine. Once browned, remove it and set aside.
Cooking the vegetables In the juice, melt the sliced onion, then add the sliced mushrooms as well.
Add the prunes, then deglaze with the white wine.
Add the "previously chopped" tomatoes, the two crushed garlic cloves, the herbs, and finally, the chicken broth. Stir everything together.
Add the pork loin. Next, add the loin and bring to a boil.
Oven cooking Once boiling, bake for about 45 minutes depending on the thickness of the loin at 190°C.
