Peel and chop the onion. Peel the garlic clove and remove the germ. Sauté them in a pot with peanut oil until the onions become translucent. Add the pork chops and sear them, turning them several times.
Peel and grate the ginger. Add the ginger, curry paste, and water to the pot. Cook until the water evaporates by one third. Then add the crushed tomatoes.
Peel the carrots and potatoes, cut the potatoes into large cubes and the carrots into slices. Add them to the pot. Pour in the coconut milk and let simmer for 30 minutes. Season to taste.
