The famous bakery specialty of Moroccan origin: Baghrir or pancakes with a thousand holes (even if they haven't been counted)! Here is an easy and quick recipe. It is prepared without fresh baker's yeast as dry yeast is sufficient.
Preparation of the batter In a blender, combine semolina, flour, yeast, sugar, salt, and warm water. Blend for 5 minutes.
Rest Pour the batter into a bowl, cover it, and let it rest for an hour.
Cooking the thousand holes pancakes In a non-stick pan, pour a small ladle of batter and let cook over medium heat until holes form on the surface of the pancake.
Tasting Serve the baghrirs hot accompanied by honey, butter, argan oil, and jam.
