This cake wrapped in thin slices of crispy bacon is accompanied by leeks, ham, and cheese. Absolutely delicious!
Preheat the oven to 180°C (350°F). Remove the first leaves from the leeks. Wash them to remove the dirt and cut off the roots. Slice two-thirds of the green parts, leaving only the tender green section. Halve the tops of the leeks and wash them again. Cut them into pieces and sauté in a pan with a tablespoon of oil over low heat for 5 to 7 minutes. Allow to cool.
Sift together the flour and the baking powder in a bowl. Make a well and crack the eggs into it. Mix. Add the Greek yogurt, grated cheese, oil, and white wine, and mix.
Cut the cheese into small cubes. Add the sliced leeks, diced ham, and cheese cubes to the mixture. Stir with a wooden spoon until you achieve a homogeneous paste. Season lightly with salt and pepper. Mix again.
In the bottom of a loaf pan, arrange the slices of bacon, overlapping them. Pour in the batter and bake for about 40 minutes. Check the doneness by inserting a knife blade into the center of the loaf; it should come out dry. Unmold the loaf and let it cool.
To finish, serve the cake cold or warm, cut into slices for a starter with a green salad or cut into cubes for an appetizer. ENJOY YOUR MEAL!
