Recipe for Italian-Style Red Mullet Fillets

A recipe full of Southern flavors: these fillets are baked and have all the elements of a gourmet dish! It's best with fresh fish, but if necessary, you can use frozen fillets. Serve them with rice, for example.

 3 Red bell pepper
 3 cloves Garlic
 8 Sun-dried tomato

Preparation of the vegetables: Prepare the onions and cut them into small cubes. Wash the peppers and cut them into strips.

Cooking the vegetables Sauté the bell peppers and onions in a pan with olive oil. Once they are nicely browned, add a cup of water, a tablespoon of tomato paste, a minced garlic clove, salt, and pepper. Let it cook on low heat for about 10 minutes.

Preheat the oven to about 180°C.

Preparation of the tomato sauce Meanwhile, blend the sun-dried tomatoes with about 2 tablespoons of olive oil, 2 crushed garlic cloves, salt, pepper, and 6 basil leaves.

Preparation of the fish. Rinse and dry the fish fillets, then season with salt and pepper. Lay out 6 fillets on a board, fill them with the dried tomato mixture, and cover with the remaining fillets.

Place the pepper-onion mixture in a baking dish and gently arrange the fish fillets on top.

Bake in a medium oven for about 15 to 20 minutes.

    Not very quick to make, is it! But very good. I added some sea salt on the fish, along with the leftover filling of sun-dried tomatoes, garlic, and basil (there was way too much).
