In the bowl of a mixer, combine the ricotta, a spoonful of grated parmesan, a few pea microgreens, lemon juice, garlic, a spoonful of olive oil, and mint leaves. Season to your liking and blend everything until smooth and creamy.

To finish, top the spread with a few pea microgreens, a drizzle of olive oil, and the remaining grated cheese, and serve as an appetizer with breadsticks, bread, or raw vegetables.
