A green melon and lime gazpacho to refresh our taste buds because during this heatwave, I discovered green melon, what a surprise when opening it—it is green and absolutely delicious and not too sweet. A wonder for making this delicious gazpacho; it must be said that our bodies need fewer calories and it is important to eat light and especially stay well hydrated.

 1 Green Galia melon
 2 Mint
 1 Olive oil
 ½ Balsamic vinegar
 ½ Lime
 1 pinch Salt

Remove the seeds and skin from the melon, then cut it into pieces.

Blend the flesh. Then add the mint, olive oil, and balsamic vinegar.

To finish, blend again and chill for at least an hour before serving and enjoy.
