A seasonal salad!

Ingredients
 450 fresh green beans
 2 young onions with their greens
 ½ clove fresh garlic
 3 very fresh eggs
 50 chorizo
 sea salt
 pepper
 2 organic unfiltered apple cider vinegar
 2 olive oil from Provence
 1 toasted sesame oil
 ½ unsalted mustard
 ½ brown sugar
 unrefined salt
 chipotle pepper
Directions

Clean and trim the green beans. Steam the beans for 10-12 minutes. Set aside.

Cook the eggs for 5-6 minutes. Cool under cold water. Set aside. Cut the sausage into thin slices and grill them dry in a pan. Set aside.

Peel and slice the garlic and onions. Crush the garlic finely and cut the onions into thin slices. In a small bowl, mix all the ingredients for the dressing. Add the onion slices and garlic. Mix well.

Set aside for at least 45 minutes. Prepare two nice deep plates. Place the green beans on the two plates. Drizzle generously with vinaigrette and pickled onions. Arrange the grilled slices of sausage.

To finish, peel the eggs, cut them in half, and arrange them on the salad. Add finely chopped green onions. Sprinkle with flaky salt and freshly ground pepper. Serve immediately.

    Very strange recipe: mustard without salt? unrefined salt? unfiltered apple cider vinegar (we know about the organic thing)? toasted sesame oil? whole sugar? chipotle pepper? Since I will never get answers to all these questions, I won't make this recipe. On the other hand, specifying very fresh eggs is obvious; we cook with eggs that are not fresh...
