 20 Fried onion

Dough: Place the flour in a mixing bowl or in the bowl of a stand mixer. Add the salt, sesame seeds, baking powder, and buttermilk. Mix, then knead until the dough becomes smooth, pliable, and not sticky. Divide the dough into 4 portions. Form balls. Using a rolling pin, roll each ball into an oval shape with a diameter of 12 cm on a floured surface. Cook the flatbreads in a hot pan without any fat for 4-5 minutes on each side.

Cheese cream: Blend the goat cheese with the cream cheese, smoked salmon, and dill (reserve a few sprigs for decoration). Add pepper and adjust the seasoning if necessary.

The assembly: If needed, warm the breads for a few moments in the microwave. Spread the cheese cream on the breads, place a slice of smoked salmon on top, and then distribute the fried onions. Garnish with lemon zest and dill.
