 1 Free-Range Chicken from Auvergne
 3 Balsamic vinegar
 1 Yellow lemon
 25 Lemon juice
 1 Honey
 3 Oregano
 2 Thyme
 5 cloves Garlic
 3 Olive oil
 Salt
 Five berry pepper
Directions

Prepare the marinade by mixing the ingredients in a bowl.

Prepare the free-range chicken: Place the chicken breast side down, and using a pair of kitchen scissors, cut along the back to remove the backbone of the chicken from both sides.

Turn the chicken over and flatten it with your hands.

Place the chicken in a large dish and pour the marinade over it, completely covering the chicken.

Let marinate for at least 2 hours or overnight in a cool place.

Preheat the barbecue.

To finish, grill the marinated chicken gently on the barbecue. Serve with a young greens salad and a dressing.
