This recipe for duck heart skewers is presented by Ernest.
Cut the hearts in half without separating them.
Cut the red, green, and yellow peppers, as well as the onion, into cubes. Set aside a few cubes of pepper in a small dish for the sauce.
Cut the cherry tomatoes in half.
Prepare the skewer by alternating the hearts, peppers, onion, and cherry tomatoes.
Season with salt and pepper, then cook on the barbecue for 10 minutes.
To finish For the sauce: chop the previously reserved peppers. In a saucepan, sauté over low heat the tomato purée along with the chopped peppers, season with salt and pepper.
